🍽 INGREDIENT NOTE: The rich peanut butter flavor of natural peanut butter is the star of these cookies! For that reason, these are moderately sweet cookies, not heavily sweet cookies. Adding more Swerve will dry out the dough, but you can use a small amount of stevia extract drops if you want a sweeter dough.

Can I Eat Peanut Butter Cookies on the Keto Diet?

Yes, you can eat peanut butter cookies on the keto diet if you use a low carb peanut butter when making the cookies. Most peanut butter brands are high in net carbs so you must choose one with a low net carb count like Crazy Richard’s Creamy Peanut Butter or Kroger Natural Creamy Peanut Butter.

Both Crazy Richard’s Creamy Peanut Butter and Kroger’s Natural Creamy Peanut Butter* are gluten free and contain only 2 grams of net carbs per serving.

(* Kroger’s website displays an incorrect carb and fiber count on the packaging. The actual Kroger Natural Peanut Butter product label displays the correct carb and fiber counts for a total net carb count of 2g.)

How Do I Make Peanut Butter Cookies Keto-Friendly?

You can make peanut butter cookies keto-friendly by using low carb ingredients instead of wheat flour, sugar, and high carb peanut butter. Use low carb almond flour or coconut flour instead of wheat flour, and substitute sugar with erythritol or monk fruit for the sweetener. Also, use a low carb peanut butter, preferably one that has no added sugars.

How to Make Keto Peanut Butter Cookies {Quick Overview}

In a medium bowl, combine all dry ingredients. (Photo 1)

Add remaining ingredients (Photo 2) and mix using an electric or stand mixer until the batter is well combined (Photo 3).

TIP: Make sure your peanut butter is well combined! When working with natural peanut butter, it’s critical that you mix the oil into the solid part of the peanut butter. The best way to do this is to empty the entire jar into a food processor and process it until smooth.

Onto a well-greased cookie sheet (I use butter), form and place cookie balls using a heaping tablespoon of batter each. Space each cookie approximately 2” apart. (Photo 4)

TIP: You may need to use two cookie sheets depending on the size of your sheets.

Use the back of a fork to flatten each cookie slightly and create a criss-cross pattern on top. (Photo 5)
