HOW TO MAKE HOMEMADE CHOCOLATE SYRUP RECIPE
Like shown in photo #1, gather your ingredients. Then place water, sugar, and salt in a saucepan to bring to a boil.
Be sure to continue to stir so the sugar dissolves.Heat up and bring to a boil for 2-3 minutes.Remove from heat.Let cool for 15 minutes before adding in cocoa. Adding the cocoa while the simple syrup mixture is still warm will remove the benefits. Stir well and then add the vanilla mixing again.Pour into a 1-pint mason jar and refrigerate for up to two months.

The best you can do is to keep it longer in the freezer (try at least 24 hours) and with some luck, you will get a very hard paste, similar to frozen butter (but not to frozen water).
It sounds like the mixture has been overheated. Its important to keep the heat very low (making sure the base of the bowl doesn't touch the hot water) and it should be smooth, glossy and the perfect consistency.
In terms of shelf life, an unopened bottle of chocolate syrup can last between 12 to 18 months. Once opened, it's advised to store it in a refrigerator, where it typically remains fresh for 6 to 12 months.

The best way to check on your maple syrup is to smell it or take a small taste. If it smells good and tastes good, it is good! If there is mold on the surface or in the container, you can scrape it off or strain the syrup through a cheese cloth to remove all of the mold pieces.
If it remains unopened and stored at room temperature in its original packaging away from direct sunlight or heat sources, it can last up to a year while still safe to consume.
