A savory heirloom tomato pie recipe is a perfect summertime dish. Transform a traditional southern tomato pie into a savory one by adding pasture raised sausage, goat cheese, and fresh garden basil. This easy homemade tomato pie dish will have all singing your praise!

A homemade southern tomato pie is incredibly delicious. One wouldn’t think so, but it is. However, this recipe is not your traditional tomato pie recipe. Instead, it is a heartier pie due to the addition of ground Italian sausage. Also, fresh basil has been included in this recipe. Why? Because tomatoes and basil go hand in hand.

Heirloom tomatoes are ideal for this recipe. Simply because they come in a variety of colors and their flavor is outstanding. Though, Romas or heirloom cherry tomatoes can also be used.

One last tip, feel free to add herbs such as thyme, parsley, oregano, and chives. These herbs will amplify the flavor of any tomato pie recipe.

Heirloom Tomato Pie Recipe

Recipes are written to be tailored to your desired taste. Feel free to modify the ingredients according to how your family will consume it. With that said, enjoy this recipe before the tomato season ends, it will be another year before you will be able to make it again!

Ingredients

  • 1/2 pound Goat Cheese, crumbled
  • 1/2 pound Mozzarella, freshly grated
  • 5 large heirloom Tomatoes, sliced
  • 1/4 cup fresh Basil, chopped
  • 1/2 pound ground Italian Sausage, or Bacon (chopped)
  • 8 cloves of Smoked Garlic, optional
  • 1/4 tsp dry Mustard
  • Lard, or any type of grease
  • 1/2 cup Mayonnaise
  • 1/2 cup Sour Cream, optional
  • Salt and Pepper to taste

A delicious buttery pie crust is ideal when making a good ol’ southern tomato pie, and I so happen have a great recipe for you! Oh, while I’m sharing, how about a homemade spaghetti sauce using beef bones? Yes, it is possible. And delicious.

Equipment

  • Cast iron 8-inch Skillet, or pie dish
  • Clean flour sack Dish towels, or paper towels
  • Baking sheet
  • Small mixing bowl
  • Pie weights
  • Parchment paper

The choice to use flour sack towels is to minimize the use of paper towels. However, paper towels will work just as well. Also, pie weights are used to help prevent the pie crust from bubbling during the pre-baking process. Pie weights are ideal for any pie making project.

Instructions

  1. Preheat oven to 375 degrees
  2. Make the buttery pie crust.
  3. Grease the bottom of the cast iron skillet with home rendered lard. Place the pie crust into the CI skillet and add pie weights. Next, bake until the crust is just beginning to turn brown. Remove the pie crust from the oven and set aside.
  4. Slice the heirloom tomatoes and place onto a clean flour sack dish towel (or paper towel). Sprinkle both sides of the tomatoes with salt and set aside for 10 minutes. Using a flour sack towel thoroughly pat the tomatoes dry. This will help to remove additional liquid from the tomatoes.
  5. Brown the Italian sausage until thoroughly cooked. Discard any grease, pat the sausage dry with a towel, then set aside.
  6. Mix together the mayonnaise, sour cream, dry mustard, mozzarella, and goat cheese crumbles. Add chopped basil and continue mixing until the goat cheese is completely mixed in with the other ingredients.
  7. Compose the pie by first adding a layer of the goat cheese mixture, then a layer heirloom tomatoes. Add a layer of the sausage, and once again the goat cheese mixture. Finally ending with a layer of tomatoes.
  8. Place the savory tomato pie into the oven and bake for 30 minutes. The pie is finished once the pie crust has completely brown, the tomatoes have roasted, and the cheese has melted.

Allow the tomato pie to slightly cool prior to serving. This allows the goat cheese to slightly harden, allowing the slices to remain intact.

Notes

In order to minimize the chance of a soggy pie, remove as much of the liquid from the heirloom tomatoes as possible. Salting the fresh tomatoes will help with this.
